Everyone Loves Banana Cake
Banana cake is usually thought of as a cake your grandmother would have made, but not you. Banana bread, maybe, but not really a banana cake. Banana cake is actually a very easy dessert to make that is a step above your regular old banana bread. It is also pretty healthy for you since it is loaded with potassium carrying bananas. You could easily serve this cake to company, but they would look at you strange if you served them banana bread.
So, for an extra special treat, try the banana cake recipe below:
Banana Cake Recipe
– 2 cups all-purpose white flour
– 1 tsp. baking soda
– 1 tsp. salt
– 1.5 cups butter
– 1.5 cups white granulated sugar
– 2 whole eggs
– 1 tsp. vanilla
– 4 mashed up ripe bananas
– 4 Tbs. thick greek yogurt
– 1 cup mini chocolate chips
Preheat your oven to 350 degrees. Lightly grease a 9×13 inch glass cake pan with non-stick cooking spray or Crisco. Dust with flour if you like. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside. In a separate large mixing bowl cream together the butter, eggs, sugar, yogurt, bananas, and vanilla. Next, in small amounts, gradually beat in the flour mixture to the butter mixture. Stir in the chocolate chips. Pour the whole batter into the baking pan and bake for 50 minutes or until a toothpick comes out clean.
Let the cake cool for 20 minutes in the pan and then transfer to a cooling rack to cool completely. Use prepared chocolate frosting or melt more chocolate chips in a double boiler over low heat to create a drizzle of chocolate for the top. Powdered sugar also works well to finish it off.
