This Italian Dessert is Easy to Make When You Know How!
Attention, dessert seeker, this cake is not for everyone, it’s an Italian cake recipe called torta Cortina. The base is a sponge, with pastry cream, but the real twist is the spicy water that wets the sponge

So, are you ready? Here we go with the ingredients for 8 people
For the sponge:
200fr flour, sifted
For the pastry cream:
1 litre milk
50gr potato flour
8 egg yolks
1tsp vanilla extract
For the decoration:
150gr white chocolate, flaked
Zest of one lemon
Spicy water to wet the sponge:
3 tsp ground cloves
1 small glass of maraschino liqueur
1 liter water
2 heaped tbsp sugar
To prepare the sponge. Mix the eggs and the yolks together in a bowl until smooth and pale. Now add one tablespoon of flour at the time and mix from the bottom up, with a spoon.
Preheat the oven at 180ºC. Prepare a loose bottomed cake tin for baking, by greasing it with butter and dusting it with flour. Pour the sponge mix in it and bake for 30 minutes. Make sure you keep the oven door closed during this time.
Now it’s time for the cream. Bring the milk to boil with the vanilla extract, then mix the yolks and the sugar together, and add the potato flour and lemon zest, also adding a ladle of milk to loosen it. Mix until flour has dissolved and pour the rest of the milk in the bowl, stir well and put it back on the heat, letting it simmer until thicker.
When the sponge is ready, let it cool and cut it into two discs.
Mix the ingredients for the spicy water and wet the sponge with it (don’t overdo, though!). Spread the cream between the two discs, and use the rest to cover the cake.
Whip the cream and use it to decorate the top of the cake as you wish, with the chocolate flakes.
